10 Awesome things to do with Turkey Leftovers

We love Thanksgiving and all the leftovers, but even the best of us struggle with what to do with them eventually. So we went in search of and found these 10 things!

Step 1:

First things first, I like to take all the meat off the bird after dinner, chop it up, and package it for the freezer. That way, over the next month or two, I can take out a package and add it to whatever I’m making.

Step 2:

After the bird is picked clean, I place it in a large stockpot with a mixture of chopped carrots, celery, and onions, (about 1 large onion, 3 large carrots, and 4 stalks of celery). Then, add a bay leaf and a teaspoon of peppercorns, and add water until it covers the bird by about 6 inches. Bring the stock to a boil and once it’s boiling, immediately turn it down to simmer. If you leave the stock to boil for more than a couple of minutes, your stock will become cloudy. Simmer for 4-6 hours, or until the water is level with the top of the bird and the stock tastes delicious. Refrigerate your stock before freezing it for later soups and yumminess.

1. I like to add chopped turkey, (or chicken for that matter) to my Healthy Broccoli Salad or Mexican Broccoli Salad.

2. Margherita Spaghetti Squash Boats are delicious with leftover chopped turkey added in, or cooked Italian sausage (I know this is supposed to be about turkey, but I just can’t help myself, the options are endless)!

3. Caesar Salad or Chipotle Caesar Salad.

4. Ginger Miso Dressing with a Green Salad.

5. You can stir leftover turkey into the sauce for Easy Butter Chicken.

6. Sesame Noodles with Fresh Vegetables.

7. Mexican Sweet Potato Skins.

8. I sometimes make a mock stir-fry by warming already cooked meat with a few tablespoons of Teriyaki Sauce and serve it over Stir-Fried Vegetables on the Grill.

9. Mix some leftover turkey in Homemade Marinara Sauce with chopped rosemary to taste, (1-2 teaspoons per batch of marinara).

10. My favorite thing to do with leftover turkey, is to mix it with leftover gravy and cranberry sauce. This is delicious served over any carbohydrate, Roasted Sweet Potatoes by my number one choice.
